Local grape varieties are carefully cultivated and fed with a biodynamic compost, an ancestor recipe of our family saga. A total immersion into the hearth of the earth: dandelion aromas, chamomile flower, mushrooms, tree bark…Humus perfumed with an aromatic herbs symphony allows the grapevines to produce an excellent grape which will be used exclusively to the elaboration of high-quality wines.
Our production is always limited, these limits on the winemaking are always marked by the quality of each harvest.
Blanc de Blancs, Rosé, Millésimé and Grand Reserve are the cavas which form the collection. All of them are produced with the traditional method. With a less pressure in bottle than usual, than any other cava, they have fine and smaller bubbles perfectly integrated which show the good work of our oenologists.
While we were consolidating our presence in market, a desire arose to produce good wines. So we decided to acquire a property in Ribera del Duero with near-centenarian vineyards of tempranillo grapes variety.
The property is treated in biodynamic method and the moon phase calendar is really important to know the best time for each activity. We work very carefully and pay attention to every detail, from manual harvest to the aging in barrels, step by step, we know what to do and we do it excellently. Small productions of selected grapes of the best quality from near-centenarian grapevines where we work to get very low outputs. Manual selection and harvest, natural fermentation to get the maximum expression of terroir, minimal intervention and minimal sulfite additions, battonage in red wine barrels, malolactic in barrels. And above all, a carefully treatment of terroir.
After all, we try to produce wine of the Best Quality to be appreciated by final consumers and praised by professional critics.
